Commonly available in most stores. The monks of Scourmont Abbey run a sizeable operation as one of the six trappist breweries in Belgium.
There are four varieties of Chimay beer but Bleue ages well and is thus considered the classic, as well as being a key ingredient in the famous Chimay cheese.
Flavours include brown sugar, raisins, toffee and lots of pepper. Strong alcohol is well masked and warming.
